Parainema Varietal ◆ Washed Process ◆ Medium-Light Roast
"Brown sugar and pecan pie to start — then pear, melon, and soft citrus drift in like the first week you don't need a jacket."
Maria Fernandez and her family grow Parainema exclusively on their El Ciprés farm — chosen for its resilience and what it delivers in the cup. At 1,500 meters in Santa Bárbara, the elevation does its work: a bright, clean washed process that lets every layer show up. This is what careful, intentional farming tastes like.

Three things we won't compromise on.
Hyper Seasonal
We think seasonally and buy accordingly — constantly cupping, tracking harvests, moving when something exceptional is at its peak. When it's gone, it's gone. That's not a limitation — that's the point.
Low Intervention
We roast to reveal, not to perform. The producers did the hard work — our job is to highlight the harvest and let what they grew speak for itself.
Farmer-First
We pay above Fair Trade and choose partners whose practices we trust. We don't take shortcuts on price, because the people growing this fruit deserve to be known — not just credited in fine print.
◆ The Ritual
